For those who have not had the pleasure.... Sometimes a gastronomic experience rises to a level where one pauses to consider the source of the magic of the food I am tasting. The patient, subtle and wise process which preceded my awakened palate leads me to ponder. I do not want to rush, eventhough I am hungry and my appetite may be urging me on, I want to savor, to ponder the swirl of scent, flavor and texture inducing this reverie.
